CSA 2013 Week 13

Hi All,

Curious to know if anyone tried the beer battered fairytale eggplant. Just finished some up here on this end – substituted smoked paprika for cayenne – they were  OK, but maybe the beer battered fares are best left to the brew pubs. But hey, you never know unless you try! (The yogurt dip though is fabulous!)

Here’s what’s in the box this week:

Small: lettuce, chard, tomatoes, beets, spaghetti squash, red onions, melons, aubergine, and a pepper.

Mediums get all this with an extra pepper, shishito peppers and dino kale.

Large, you also get extra peppers, extra kale and leeks.

Now, the beer battered eggplant was an experiment, but Fine Cooking’s recipe for spaghetti squash with Indian spices has been tried and it’s pretty delish. You can also use the tomatoes and even though it calls for yellow onion, red onion would go well with this dish.http://www.finecooking.com/recipes/spaghetti-squash-indian-spices.aspx

And we have beets! Roasted beets are one of my favourite fall foods. Here’s a recipe to have them in a salad, with goat’s cheese. They call for arugula, but there is no reason not to use the lettuce in the box! And another use for those tomatoes. If you have some fennel left from last week, that will be great.
