CSA 2015 Week 3

 

In From The Fields

As the summer progresses we are beginning to see more variety in our fields and of course in your boxes! This week we have been busy getting more potatoes into the ground, trellising tomatoes, seeding in the greenhouse, and of course plenty of harvesting! For some CSA veterans, cooking with the variety of veggies in the boxes may be no problem at all, and for others it may be a bit daunting to know what to do with kohlrabi or bok choy for example. Not to worry, each week we will do our best to include a recipe for the “not as common” veggies in the box. We hope you have a great week and enjoy exploration and healthy eating!  

In this weeks box:

Garlic Scapes

Basil

Lettuce

Zucchini

Siberian Kale

Swiss Chard

Kohlrabi

Basil and Scapes Pesto
  • One bunch of garlic scapes
  • One bunch of basil
  • Dash of olive oil
  • Juice of half a lemon
  • One package of pine-nuts
  • Salt and pepper to taste

    Bash the scapes either in a blender or a mortar & pestal with a pinch of salt, then add Basil leaves and pine nuts to create a paste. Next add the olive oil and the lemon juice and add a dash of pepper to taste. If you like your pesto a little on the runnier side don’t be shy to add a little bit of water. This recipe serves 6-8 people approximately. Add and take away ingredients as you like to make more or less. Eat with your favourite kind of pasta, on grilled chicken or fish, or on a pizza. Easy! Supper is served!
