Waratah Downs Organic Farm CSA Week #5

Good Day CSA members,

It is a lovely day for picking out here at Waratah Downs, and we are so excited to offer cucumbers and potatoes to everyone this week! The week or so of sunshine and warmer weather has done us well out here, as we see things beginning to really take off, and what a wonderful thing it is to see. It should be a matter of weeks before our tomatoes, peppers, and eggplants really start to come in and we are able to share the harvest with you.
The cooler weather this morning and downright miserable day of excess rain yesterday have inspired us to try out some soup recipes this week. I found a great looking one for a scape and potato soup that should satisfy the yearning for a warm and vital soup to nourish anyone, the recipe can be found here: https://www.theglobeandmail.com/life/food-and-wine/recipes/scape-and-potato-soup/article646104/
Shelling peas can be a little work to get them out of their little package, but the sweet little peas are a satisfying reward. This risotto recipe is a little luxurious, but in our opinion it would be a rewarding way to relish in this seasonal favourite, and a great way to honour the humble pea and the often under appreciated zucchini. One of our personal favourite ways to prepare zucchini is in a zucchini pancake, the perfect pairing with eggs for a hearty breakfast or for an impromptu breakfast for dinner.
