CSA 2015 Week 2

This week’s CSA is brought to you by: rain. We’ve had a lot of it the past couple of weeks, and though it is a welcome help to the veggie growth, the fields have been so wet that it’s been hard to get out and make beds in the fields to plant. We are desperately working to get transplants and seeds into the ground! 
The rain is also great for the weeds, so we have been weeding and re-weeding, hoping that when the sun does shine it will kill the roots and make our job a little easier!
 

There is a bounty of harvest from the fields soon to come. The tomatoes are green, the beans are flowering, and the zucchinis are almost ready! 
Our garlic scapes have been growing so fast that we almost can’t keep up. We will be harvesting all of them by the end of the week. Some of you who didn’t receive kohlrabi already got scapes last week, but this week we have enough for everyone. The next harvest of kohlrabi we’ll make sure that everyone who didn’t get it does!

Don’t forget to eat those beet greens! You can cook them much the same as collards. Fry in butter in a skillet, add salt & pepper to taste. A dash of lemon juice adds a delicious kick.

Scapes are delicious in salads, pureed with herbs, parmesan and olive oil for a pesto, or even tossed in olive oil and barbecued!

You may notice slightly lighter boxes than last week. We try to give you the best variety week to week, but this time of year we have a lot of greens! Don’t worry, we will make it up to you when all the delicious summer veggies ripen.
